Black Bean Power Bowl

These bowls are a great way to get some healthy veggies and plant-based protein. I love to mix and match veggies, proteins, and sauces to add variety to my weekly lunches/dinners. It is hard to get sick of them!

Coconut Quinoa:

1.       For this recipe all you need is a can of coconut milk, ½ cup water, and 1 cup quinoa.

2.       Add all ingredients to a small pot and bring to a boil.

3.       Reduce heat and simmer for about 15-20 minutes until all liquid is absorbed.

While the quinoa is cooking, start your veggie prep, and the whole meal can come together in under 30 minutes!

Protein Ideas:

These bowls are a great meatless option to add into your rotation. For this recipe you can use black beans, red beans, pinto beans, or even refried beans.

1.       Store bought salsa

Veggies:

INGREDIENTS

·       Bagged Greens (1 bag)

·       Sweet potatoes (2)

·       Tomato (1)

·       Bag of Cauliflower (1)

·       Avocado (1)

·       Black Beans (1 can)

·       Coconut oil spray

·       Salt

·       Pepper

·       Garlic Powder

·       Chipotle pepper powder

·       Cumin

INSTRUCTIONS

1.       Preheat oven to 400 degrees

2.       Chop your sweet potatoes and cauliflower and season with about a 3 second spray of coconut oil spray or 1 TBS coconut oil and a pinch of salt and pepper, 1 tsp garlic powder, 1/2 tsp chipotle pepper powder, 1 tsp cumin (all to taste)

3.       Bake sweet potato and cauliflower for 17-20 minutes. They will be nice and crispy.

4.       Take out veggies

5.       Cut up tomato and avocado into slices

6.       Make your bowl by layering coconut quinoa,1 handful of bagged greens, roasted veggies, beans, and top with salsa and avocado and ENJOY!

7.       Use leftovers for dinner the next couple of days
