Tuna Sushi Bowl with Spicy Mayo

Get your sushi fix with this Tuna Sushi Bowl complete with creamy avocado and a Sriracha Mayo!

Canned tuna gets a bad rap, but these bowls take it from blah to YEAH! I have sushi cravings at least once a month without fail, and this bowl does the trick for me. I love the mixture of creamy, crunchy, and salty in this bowl. Definitely make the Sriracha Mayo to go on top.

Farro and Quinoa Blend:

Ingredients:

1/2 cup Farro

1/2 cup Quinoa

2 cups Vegetable Broth

  1. Add all ingredients to a small pot and bring to a boil.

  2. Reduce heat and simmer for about 15-20 minutes until all liquid is absorbed.

While the quinoa is cooking, start your veggie prep, and the whole meal can come together in under 30 minutes!

Sesame Soy Sauce:

4 TBS Soy Sauce

2 TBS Rice Wine Vinegar

1 TBS Sesame Oil

Mix together all the ingredients in a bowl and set aside.

Bowl:

INGREDIENTS

·       Carrot

·       Cucumber

·       Sugar Snap Peas

·       Avocado

·       Tuna

·       Sriracha Mayo for topping (Mix 2 TBS 2% plain yogurt with 1 tsp Sriracha)

·       Optional: Green onions and sesame seeds

INSTRUCTIONS

1.      Chop all Vegetables into sticks if you like.

2.       Assemble your bowls! Start with 1/3 cup grains, add at least 1 cup of veggies, 1/3 avocado, and 1/2 a can of tuna. Top tuna with sesame soy and add your sriracha mayo and optional toppings.

Chopsticks optional with these bowls!
